School lunch recipes

2 teaspoons lemon juice

1 small garlic clove

1 teaspoon fresh thyme

Pinch salt

1/4 teaspoon pepper

4 large (10-12 inch) flour tortillas

1/2 pound thinly sliced deli turkey

1 large tomato, thinly sliced

1/4 medium red onion, thinly sliced (optional)

4 tablespoons Parmesan cheese, shredded

1 cup baby spinach leaves

Combine beans, oil, lemon juice, garlic, thyme, salt and pepper in the bowl of a food processor. Puree until smooth.

Spread about1/4 cup bean spread on one side of each tortilla leaving a 1-inch border around the edge. Arrange 2 ounces turkey down the center of each tortilla. Layer with 2-3 slices tomato, 1-2 slices onion, 1 tablespoon cheese and1/4 cup spinach.

Starting at one end, tightly roll each tortilla and place, seam side down, on a serving plate. Cut crosswise in half and serve.

CANTALOUPE WITH RASPBERRY DRESSING

1 cantaloupe, seeded

1/4 cup raspberry wine vinegar (see note)

1 1/2 tablespoons honey

1 teaspoon poppy seeds

Cut the cantaloupe into quarters, or use a melon baller to scoop out cantaloupe balls. Set aside.

Whisk together vinegar, honey and poppy seeds, stirring well. Drizzle evenly over cantaloupe.

Note: If you are unable to find raspberry wine vinegar, use1/4 cup white-wine vinegar with 1 teaspoon seedless raspberry jam.

Makes 4 servings

TURKEY, AVOCADO AND CHEDDAR

3 to 5 slices roast turkey

2 slices 7-grain bread

1/2 a small avocado, sliced

1 to 2 slices Cheddar cheese

Place turkey on a slice of 7-grain or whole-grain bread. Top with thinly sliced avocado, Cheddar cheese and another slice of bread. Makes 1 sandwich.

Prepare the Shortbread

Sift together flour, salt and baking powder; set aside. With mixer on high, cream butter until light and fluffy. Next add egg yolks and 2 cups sugar. Mix until sugar is dissolved and mixture is light. Switch mixer to low and add dry ingredients previously set aside. Mix only until incorporated. Make 2 balls, wrap in plastic wrap, and freeze 30 minutes.

Prepare the Jam

In a medium saucepan over medium heat, combine cranberries, orange juice, 1 cup sugar and orange zest. Simmer stirring often until cranberries are softened. Remove from heat. Let cool. Assemble the Shortbread -Preheat oven to 350 degrees. Using one ball, grate with coarse grater into 9 x 12-inch pan. Press down lightly. Cover with jam. With second ball, repeat with grater. Bake for 40 minutes. Remove from oven and sprinkle liberally with powdered sugar.
